1 whole branzino, butterflied
2 tbsp olive oil
1 tbsp whole grain mustard
1 small garlic clove finely grated
1 tsp fresh thyme, finely chopped
½ cup coarse breadcrumbs
Salt & pepper


-Pre-heat oven to 450.
-In a small bowl mix together oil, mustard, thyme and garlic.
-Add in breadcrumbs and stir until saturated.
-On a baking sheet lined with parchment paper season fish with salt and pepper and spread mustard mixture evenly on the flesh on the fish.
-Cook until breadcrumbs are golden and fish is cooked through, about 10-15 minutes.
